Ingredients

  • 1 tbsp Canola oil
  • ½ lb tortilla chips
  • 1 can El Pato hot tomato sauce
  • 1 cup shredded Mexican cheese blend
  • 1 can black beans
  • 1 large avocado
  • 4-5 green onions
  • Fresh cilantro
  • 1 small lime

Instructions:

  1. Wash and dry all produce. 
  2. Open, drain, and rinse the black beans.
  3. Cube the avocado, thinly slice the green onions and cilantro. Cut your lime into wedges. Set all of these aside for topping later.
  4. Over your fire, heat a drizzle of oil in a cast-iron skillet or Dutch Oven. 
  5. Add a layer of chips and spread them evenly over the bottom. Top with ¼ of the El Pato, ¼ of the black beans, ¼ of the cheese, and a handful of the avocado, green onions, and cilantro. Repeat this layering to create a second layer of ingredients. 
  6. For the final layer, add the chips and spread them evenly, then top with the remaining ingredients.
  7. Cover and cook for 10 minutes or until the cheese has melted through. 
  8. Serve with lime wedges and sour cream.
